Characteristics and Antibacterial Effect of Chitosan Coating Nanoemulsion Containing Zataria multiflora and Bunium persicum Essential Oils Against Listeria monocytogenes

Background: Nowadays, finding natural compounds with antimicrobial properties against pathogens is very important, especially for the food and drug industries. Objectives: The antibacterial activity of chitosan coatings nanoemulsion (NE) containing Zataria multiflora Bunium persicum essential oils (EOs) was evaluated in a model (chicken breast fillets) during 15 days refrigerated storage. Methods: chicken fillets were divided into seven groups: control, 2%, sonicated NE coating Z. muitiflora EO (ZMEO, 0.5%, 1 %) B. (BPEO, %). Characteristics EOs analyzed. Moreover, Listeria monocytogenes investigated. Results: results showed good coatings. analysis revealed that major components ZMEO carvacrol (51.55%) thymol (25.49%). In addition, main BPEO p-cumic aldehyde (38.39%) p-cymene (18.36%). All treatments exhibited properties; however, best result recorded 1% ZMEO, which lowest amount L. (7.61 Log CFU/g). samples 7.73 CFU/g. Conclusions: Therefore, based on this study, as preservatives can be recommended meat products, meats.
